Creme Fraiche<br \/>1 Dose Safran<br \/>Zitronensaft<br \/>Cayennepfeffer<br \/>Salz, Pfeffer<\/p>\r\n\r\n\r\n\r\n<p>Die Fischfilets in kleine St\u00fccke schneiden, zusammen mit den feingehackten Schalotten im hei\u00dfen \u00d6l kurz anbraten. Etwas abk\u00fchlen lassen und mit Basilikum, Eiern, Creme Fraiche, Salz und Pfeffer zu einer Farce mixen. Soufflef\u00f6rmchen\u00a0 ein\u00f6len und Farce einf\u00fcllen. Im 200 Grad hei\u00dfen Wasserbad 20 Minuten stocken lassen. Danach im ausgeschalteten Ofen etwas ruhen lassen. Inzwischen Sauce anr\u00fchren. Fond, Sahne, Safran cremig einkochen. Mit Salz, Pfeffer, Zitronensaft und Ceyennepfeffer abschmecken. Die Fisch-Flans auf vorgew\u00e4rmte Teller st\u00fcrzen, mit der hei\u00dfen Sauce umgie\u00dfen.
