Schalotten in hei\u00dfer Butter and\u00fcnsten, nicht braun werden lasen. Knoblauch zuf\u00fcgen wenn Schalotten weich sind. Fischfond, Wein und Sahne (Creme Fraiche) zuf\u00fcgen, Viertelstunde einkochen bis Sauce cremig. Fischfilets in mundgerechte St\u00fccke schneiden, mit Zitronensaft, Salz, Pfeffer und Cayenne w\u00fcrzen. Sauce mit Safran einf\u00e4rben und behutsam abschmecken. Fischw\u00fcrfel einlegen und 2-3 Minuten sanft ziehen lassen. Nicht kochen!
