Zucker, Kardamom, Safran und Salz hinzuf\u00fcgen, das Ganze zum K\u00f6cheln<br>bringen, dann die Birnen hineinlegen. Sie sollten vollst\u00e4ndig mit Fl\u00fcs\u00adsigkeit bedeckt sein &#8211; falls n\u00f6tig noch etwas Wasser dazugeben. Mit einem St\u00fcck Pergamentpapier abdecken und die Birnen unter gele\u00adgentlichem Wenden 15-25 Minuten k\u00f6cheln lassen, bis sie durchge\u00adgart sind. F\u00fcr die Garprobe mit der Spitze eines Messers in eine Birne stechen. Sie sollte m\u00fchelos in das Fruchtfleisch eindringen.<\/p>\n\n\n\n<p>Die Birnen aus dem Topf nehmen und auf vier Dessertschalen vertei\u00adlen. Die W\u00e4rmezufuhr erh\u00f6hen und die Garfl\u00fcssigkeit um etwa zwei Drittel einkochen lassen, bis sie die Konsistenz eines dicken Sirups hat Die Birnen damit \u00fcberziehen und abk\u00fchlen lassen.
